Heat up an oven-safe skillet on stove top. Drizzle the oil and add the garlic, cook until golden. Add in mushrooms, cook until brown. Stir in the kohlrabi, scapes and cook until leaves are wilted. In a small bowl add the egg whites and milk and whisk together. Pour over top of the mixture and stir until well-blended. Allow to cook and sprinkle the cheese over top. Place the whole pan in the oven and bake at 350º for 20 minutes.
