Bean Chili

  • 15 oz can of each: black beans, kidney beans, cannellini beans, black eyed peas
  • 2, 15 oz cans diced tomatoes, with or without green chiles
  • 1 pkg taco seasoning mix
  • 1 pkg ranch dip mix
  • 3 cups green pepper, cut into large pieces
  • 3 cups celery, sliced into large pieces
  • 1 cup onions, optional

Do not drain the beans! Mix all ingredients in a large pot and simmer for about 10 minutes, until vegetables are just tender.
