Cook turkey in a nonstick pan until no longer pink, breaking into crumbles. Dice ½ of the onion and pickles. Mix onion and pickles with ketchup and mustard. Add the cooked turkey to this mixture. Arrange lettuce on a serving platter. Spoon turkey mixture over lettuce. Top with cheese, quartered tomatoes and the other half of the onion (in rings). Arrange toasted bagel pieces around the edge of the platter.
