- 1¾ cup plus 2 tbsp Kims Light Biscuit Mix*
- ⅓ cup nonfat milk
- ½ cup Splenda®
- 1 tsp lemon extract
- 2 tbsp Brummel & Brown® Buttery Spread
- 1 tbsp shortening
- 2 tbsp Egg Beaters®
- 1 tbsp lemon zest
Preheat oven to 350° and spray Madeline Cookie Pan with cooking spray. Combine all ingredients, except the colored sugar. Beat until well-blended. Drop by tablespoon (dipping your spoon in water will help with the ease of dropping the dough) onto prepared baking sheet. Sprinkle with a pinch of colored sugar and flatten gently with your damp fingertips. Bake 8-10 minutes. Let cool on wire rack.
