Beat Egg Beaters®, half & half, water, salt and pepper in a medium bowl until well-blended. Add the cheese, zucchini, peppers and onions and stir until mixed. Spray a muffin tin with fat-free cooking spray. Spoon evenly among the 12 muffin cups. Bake at 350°F for 25-30 minutes, or until just set and cooked throughout. Cool for 5 minutes before removing and serving.
