Garden Frittata

  • 1 tsp olive oil
  • 5 cloves garlic, minced
  • 2 cups mushrooms, chopped
  • 3 cups kohlrabi leaves, chopped
  • ½ cup scapes
  • 8 egg whites
  • ½ cup nonfat milk
  • ½ cup fat-free shredded cheddar cheese

Heat up an oven-safe skillet on the stove top. Drizzle the oil in the pan; add the garlic and cook until golden. Add in the mushrooms and cook until tender. Stir in the kohlrabi and scapes and cook until the leaves are wilted. In a small bowl, add the egg whites and milk and whisk them together. Pour over the top of the mixture and stir until well-blended. Allow to cook for a couple minutes and then sprinkle the cheese over top. Place the entire oven-safe skillet in the oven and bake at 350º for 20 minutes.
