No Bake Cheesecake

  • ½ cup fat-free sour cream
  • 2, 1.4 oz boxes sugar-free, fat-free cheesecake flavored pudding, instant mix
  • 8 oz fat-free cream cheese
  • 1 cup Calabro® fat-free ricotta
  • ¾ cup Splenda®, divided
  • 1 envelope unflavored gelatin
  • ½ cup cold water
  • 16 lady fingers
  • ½ cup ground Fiber One® cereal (measure this before you grind it)

Blend the first four ingredients and ½ cup Splenda® together with an electric mixer. In a small bowl mix the gelatin and water until dissolved and pour into the cheesecake mixture and continue mixing until smooth. Lay the lady fingers around the perimeter of the 6" springform pan. Sprinkle the Fiber One®, mixed with ¼ cup of Splenda® on the bottom and flatten out. Carefully pour the filling in the pan and smooth out the top. Let it set in the refrigerator for at least 2 hours.
