Flatten some chicken pieces slightly to ensure the same thickness in each piece. Lightly coat a medium sized skillet with cooking spray. Add garlic and chicken and lightly pan-brown the chicken on both sides. Sprinkle with salt and *Tuscany Blend Italian Seasoning and pour tomato sauce on top. Turn breasts over in sauce. Cover and cook over a low heat for 10 minutes. Turn breasts and continue cooking for another 10 minutes. Just before serving top each breast with mozzarella and *Fat-Free Parmesan Cheese .
