Organic chicken farmers do a number of things to ensure that chickens are reared as naturally as possible. For starters, antibiotic growth promoters cannot be used. Organic poultry is reared on a specially formulated feed which is free from genetically modified feedstuffs (GMOs). Such feed is expensive, and therefore organic chicken is more expensive. Organic produce is more limited in calorie/fat selection as well, so the final recipe is higher than the fat-free/low calorie version. A low calorie/fat-free Chicken Parm will usually greatly reduce the breading. Sauces can be high in sugar AND oils (not good for a low carb OR a low fat diet), but careful label reading can eliminate this problem – or making a sauce from scratch. In this recipe we've used both fat-free Parmesan and fat-free mozzarella cheese. Protein, such as chicken, is basically carb-free. In the Chicken Parm recipe the carb concerns are in the sauce which can be loaded in carbohydrates. We used a low-carb sauce with no added sugars. And, of course, the breading had to be eliminated. The important thing to note is the cheese. The lower in fat the cheese – the more carbs the cheese contains. So a low carb diet will naturally have a cheese with a higher fat content.
