This dish is an elegant addition to any buffet or great for a main dish just for you and your family. Easy to make and so light!

1½ cup egg substitute
¼ cup skim milk
⅓ cup fat free cheddar cheese
½ cup fat free mozzarella
¼ cup chopped scallions (green onions)
1 tbsp fat free parmesan
fresh ground pepper
Your favorite seasonings
½ cup asparagus, (cut into 1" pieces)

Preheat oven to 375°F. Lightly coat a 9-inch pie plate with fat-free cooking spray; set aside.

In a medium bowl whisk together the egg substitute, skim milk, cheddar cheese, mozzarella cheese, scallions, fat free parmesan, salt, and pepper. Add any seasonings you prefer, i.e. garlic powder, Italian Seasoning, etc. Stir in asparagus and pour into prepared pie plate. Bake about 20-25 minutes, or until set. Remove from oven and let stand 5 minutes before serving.
