Ricotta Gnocchi Recipe, Kim's

1⅔ cup fat free ricotta cheese
⅓ tsp salt
⅓ cup egg substitute
½ cup fat free parmesan cheese
¾ cup flour
Dietary Restrictions : Kosher, Vegetarian

Combine all ingredients in a large mixing bowl and knead until a dough consistency forms. Form it into a ball shape and cut in half, and then each of those will get cut in half as well. You should now have four equal sections of dough. Take one section and into a snake about 18" long. Cut each snake into 24 pieces about ¾" each. Repeat with the remaining dough until all dough is cut into small pieces.

Place the gnocchi dough into boiling water for 2 minutes. Serve with your favorite sauce and *Fat-Free Parmesan Cheese , optional (not factored).
