BBQ Chicken Panini, Kim's

This is one of the favorite recipes from Kim's Light Café.

1 Kim's Light Chicken Cutlet
2 tbsp Kim's Light BBQ Sauce
ΒΌ cup grilled onions
1 Kim's Light Flat Bread
1/4 cup reduced-fat shredded cheddar cheese

Slice on a diagonal Kim's Light Chicken Cutlet and combine with BBQ Sauce in a small bowl. Stir until all the chicken has been coated with the sauce; set aside. Spray a nonstick skillet with fat-free cooking spray. Saute the onions until they become translucent and start to turn brown. Add cutlet and warm for 1 minute.

On a flat skillet, place 1 *Kim's Light Flat Bread. On one half of the flat bread, sprinkle ¼ cup of cheese, half of the chicken mixture and half of the sauteed onions. Top with another ¼ cup of cheese. Fold over the other half of the flat bread to cover that top layer of cheese. Heat for 4 minutes on medium heat until bottom starts to get a little crispy. Very carefully, flip the quesadilla over to heat the other side. Remove from the heat and repeat with the other flat bread and remaining ingredients.
