American Chop Suey, Kim's

This was one of Kim's mother's main-stay recipes for the family when she was growing up. It's just as delicious and much lighter with some minor substitutions.

12 oz ground turkey
1 cup chopped green pepper
1 cup chopped onion
3 cups chopped tomatoes
2 oz 2% American cheese
1 tbsp lite soy sauce
1 tsp chili powder
1 tsp salt
4 oz dry Fiber Gourmet light rotini pasta
Dietary Restrictions : Kosher

Cook pasta according to directions. Drain.

Lightly spray a nonstick skillet with fat-free cooking spray. Add the onion and peppers. Add ground turkey and cook until turkey is no longer pink, stirring frequently. (Drain if needed.) Add tomatoes, American cheese, soy sauce, chili powder, salt and Fiber Gourmet Light Rotini Pasta. Simmer for 10 minutes until blended.
