Apple-Cheddar Soup, Kim's

2 packets Alpine Spiced Cider Sugar Free Mix
2 cups hot water
½ cup finely chopped onion
1 tbsp Brummel and Brown Spread
1½ cup diced potato, without skin
1 tsp fresh thyme (or ½ tsp dried thyme), crushed
½ tsp salt
Dash cayenne pepper
1 medium apple, peeled and coarsely chopped
½ cup skim milk
2 tbsp all purpose flour
1 cup fat free cheddar cheese
Dietary Restrictions : Vegetarian

Combine the two packets of Sugar-Free Spiced Apple Cider Mix with hot water. Stir until dissolved, then set aside and allow to cool.

Add onion and Brummel & Brown® to a large saucepan and cook over medium heat until tender. Stir in the potato, prepared cider, thyme, salt and cayenne pepper. Bring to a boil; reduce heat and simmer, covered, for about 15 minutes. Add chopped apple and continue simmering, covered, until potatoes are tender. In a separate bowl, combine milk and flour and stir the mixture into the soup. Cook and stir until bubbly. Slowly add cheese, whisking until cheese is melted.
