Buffalo Cauliflower Bites, Kim's

This is a healthy and meatless appetizer that is perfect for football games, afternoon snacks, or even lunch. Tastes great using broccoli florettes, too!

10 cups raw cauliflower pieces
⅓ cup almond milk, unsweetened
¼ cup all purpose flour
2 tsp garlic powder
¼ cup hot sauce
¾ tsp salt
½ tsp baking powder

  1. Preheat the oven to 480 degrees Fahrenheit.
  2. Chop the head of cauliflower into bite-sized pieces. In a mixing bowl, combine the remaining ingredients
  3. Toss the bite-sized pieces of cauliflower in the mixture until well coated. Place on a baking sheet prepared with cooking spray. Bake in the preheated oven for about 20-25 minutes, until slightly browned and crispy. The length of time depends on your oven AND what kind of vegetables you are using. ie: broccoli takes about 10 minutes less time than cauliflower.
  4. Allow to cool slightly and serve with crumbled blue cheese or blue cheese dressing for dipping (not factored).
