This recipe was first made in Bay Head, NJ by Mark's cousin and we fell in love with it! I bugged Tom for the recipe for months. It's so easy! Light and delicious. I serve it with the barbeque sauce on the side and put out several varieties: Kim's Light Barbeque Sauce, Mild and Super Uuber Hot. A few light hamburger buns or on the side with a salad and you've got a meal!

22 oz pork tenderloin, raw, cut into 3" chunks
1 cup onion
1 large bell pepper
1½ tsp oregano
¾ tsp garlic salt
½ tsp black pepper
½ tsp garlic powder
2 tsp garlic, chopped

Dice the green pepper and onion. Put all the ingredients together in a slow cooker and set on high for 20 minutes. Then change to the low setting and leave in for 10 hours. Check after about 6 hours and as you stir it around start pulling the meal apart with two forks. As it cooks slowly in will begin to fall apart and shred easily. In the end you will have a fabulous shredded pork dinner. Serve with a side of barbeque sauce and light rolls or Kim's Light Bagels to make pork sandwiches.
