This Maine version of jambalaya has all the taste with little fat.

1 cup chopped onion
1 cup green pepper, chopped
½ cup red pepper, chopped
1 cup celery, diced
1 tbsp garlic, chopped
2 links chicken sausage (240 calories)
1 cup diced tomatoes
2¼ cups fat free chicken or vegetable broth
½ tsp thyme
up to ¼ tsp cayenne pepper, if desired
1½ tsp cajun seasoning
1 cup uncooked long-grain white or brown rice
½ lb uncooked shrimp, peeled, deveined and halved

Slice chicken sausage into 1/4" thick medallions and set aside.

To a large frying pan, add onion, peppers, garlic and celery. Cook for about 4 minutes over medium heat, stirring frequently, until the onion begins to turn golden. Stir in the tomato, thyme, cajun seasoning and cayenne pepper. Add the stock, and bring to a boil.

Add the rice, sliced chicken sausage and shrimp. Cover, reduce the heat to low, and simmer for another 20 minutes or until rice is soft.
