Spaghetti Squash Lasagna

If you like lasagna, you'll love this delicious italian dish. And you can have so much of it for so few calories!

6 cups spaghetti squash, boiled/steamed
15 oz can tomato sauce
1 cup fat free ricotta cheese
2 tbsp dried parsley
¼ cup egg substitute
¼ cup fat free parmesan
1½ cup fat free mozzarella cheese, shredded
Dietary Restrictions : Kosher, Vegetarian, Gluten Free

In a medium sized bowl, mix together ricotta cheese, fat free parmesan cheese, parsley and egg substitute. Set aside.

Scoop out cooked spaghetti squash from it's shell. Ladle 1/4 cup spaghetti sauce on the bottom of a 9" x 13" baking dish. Top with 3 cups of cooked spaghetti squash and spread evenly. Top each with half the cheese mixture and ¼ cup mozzarella cheese. Add the remaining layers of spaghetti squash, spaghetti sauce, cheese mixture and top with remaining mozzarella cheese. Cover with foil and bake for 15 - 20 minutes, or until the cheese is melted and the edges begin to bubble; uncover and cook an additional 5 minutes.
