Dirty Mashed Potatoes Recipe, Kim's

Mashed potatoes never tasted so good. No one will know they're light! They're not really dirty, but we do leave the skins on for an authentic mashed potato that's higher in fiber and nutrients. With cream cheese, garlic and other flavorful ingredients, they taste as good as you'd expect.

6 cups raw potatoes
¼ cup fat free cream cheese
2 cloves garlic
¼ cup fat free sour cream
½ tsp garlic salt
1 tbsp light butter
Pasta, Grains & Potatoes
Dietary Restrictions : Kosher, Vegetarian, Gluten Free

Wash potatoes and cut into large cubes, but do not peel. Place in a large pot, cover with water and boil until fork tender. Drain. Beat with an electric mixer on low speed or mash together with remaining ingredients.
