Another great restaurant knock-off. This one has almost half the calories and half the fat of the original!

1 Kim's Breaded Chicken Cutlet
5 cups romaine lettuce, chopped
¼ cup fresh or frozen peas, cooked, drained
2 tbsp carrots, shredded
½ cup tomatoes, chopped
½ cup cucumber, chopped
2½ tbsp reduced fat shredded cheddar cheese
1 tbsp sliced or slivered almonds
3 tbsp fully cooked bacon bits
3 tbsp light ranch or honey mustard dressing

Prepare Kim's Light Breaded Cutlets & Kim's Light Croutons ahead of time.

Heat bacon, if desired. Toss together lettuce, peas, carrots, tomatoes, cucumbers, cheese, almonds, croutons, and bacon. Top with sliced cutlet. Serve dressing on the side.
