Baked-in-an-Apple Pie, Kim's

These little treats are so darned cute! The fact that they are individual servings makes them easy to control and they have fewer calroies than a slice of apple pie.


ingredients
1 small apple (2½")
2 tbsp Whey Low Gold (Brown) Sugar
½ tsp cornstarch mixed with 1 tsp water
½ tsp cinnamon

⅛ Kim's Light Flatbread
¾ tsp Whey Low Granular
⅛ tsp cinnamon

Preheat oven to 400°.

 

  1. Slice the top off your apple and scoop out the inside of the apple. Using a knife and a spoon to hollow out the apple works best.
  2. In a smal bowl mix the scooped out meat of the apple (diced) with the Whey Low brown sugar, cornstarch mixed with water and cinnamon. Spoon the filling into the well of the apple. Place apples in a small baking dish and fill with 1/4-inch of water. Bake for 15 minutes.
  3. Lay a Kim's Light Flatbread on a cutting board and slice off 6 strips that are 1/4" x 4" in length. Weave the strips on top of the apple in a latice pattern (as pictured). Spray lightlty with butter spray and sprinkle with Whey Low granulated sugar and cinnamon.
  4. Bake for an additional 5-7 minutes until crust is golden brown. Remove from oven and enjoy.
