Pasta with Roasted Tomatoes and Garlic, Kim's

Oh my! Fresh, filling and oh so delicious! This recipe is a winner for any season.

5 large tomatoes, halved
2 cups cherry tomatoes, halved
2 heads garlic, skin on and tops cut off
8 ounce fiber gourmet pasta
1 tbsp olive oil
1¼ cup fresh basil, torn
¼ cup fat free parmesan cheese
1 tsp sea salt
Dietary Restrictions : Kosher, Low Sodium, Vegetarian

Place a rack in the upper third of the oven and preheat oven to 400°. Place tomatoes, cut side up on a rimmed baking sheet. Mist with 1 tsp olive oil (55 pumps = 1 tsp in Kim's Oil Mister) and sprinkle well with salt and pepper. Roast until tomatoes are browned and wrinkled, about 30 minutes.

Roast the garlic heads at the same time! Place garlic, cut side up on a a large piece of parchment paper. Mist with 10 pumps olive oil and sprinkle with salt and pepper. Wrap parchment, place on cookie sheet and roast with the tomatoes, about 30 minutes or until completely browned and softened.

Boil the Fiber Gourmet Linguine (or other shaped pasta) while the tomatoes and garlic roast.

Assembling the pasta is simple. Toss cooked pasta with tomatoes, soft garlic pressed from the head, 2 tsp olive oil, Fat Free Parmesan Cheese and pepper. Top with fresh basil. Enjoy!
