This recipe is one of Kim's mom's favorites.

1 lb green split peas
3 quarts water
1 large onion, chopped
2 chicken bouillon cubes
½ tsp garlic powder
½ tsp oregano
1½ cups carrots, chopped
1 cup celery, diced
1 ham shank (this recipe approximates 3 oz of ham
Dietary Restrictions : Dairy Free, Gluten Free

In a large, deep pot, combine peas, water, ham shank, onion, chicken bouillon and seasonings. Simmer uncovered 1½ hours. Remove ham shank, trim meat off bone and return meat to pot. Stir in carrots and celery and simmer uncovered 2-2½ t more hours.
