Baked Flatbread Ravioli, Kim's

Typical ravioli calories range from 250 for 3 large round to 272 for one cup (3 oz) of Buitoni. Our delicious Baked Flatbread Ravioli and so simple to make, yet they are only 11 calories each! For a 3 oz cup, there are 9 ravioli, making the calories less than 100! Add a little sauce and sprinkle some mozzarella or parmesan cheese and ... ta da! Light, filling, scrumptous!

2 Kim's Light Flatbread
1 egg white
¼ cup fat free ricotta cheese
1½ tbsp fat free Parmesan cheese
2 tbsp reduced fat cream cheese
1 tbsp fresh parsley (or 1 tsp dried)
Dietary Restrictions : Kosher, Low Sodium, Vegetarian

Stack two Kim's Light Flatbread on top of one another. Using a pizza wheel (or large knife), cut in half vertically, then into six pieces horizontally. Separate and set aside.

In a medium size bowl, whip egg white until foamy. Add in Fat Free Parmesan Cheese and fat free ricotta cheese. Mix well. Add in remaining ingredients and continue mixing until well incorporated.

Take one rectangular piece of Flatbread. Put 1 tsp cheese mixture about 1/4 inch from one end. Fold piece in half to cover, but do not press down. With the back side of a fork, press tines into the dough firmly all the way around to make a ravioli shaped square.

Place ravioli on a baking sheet and bake for 7-8 minutes, until lightly golden brown.

Place desired number of ravioli on a bowl or plate and add tomato sauce. Sprinkle with mozzarella and/or Parmesan cheese. Enjoy!
