Cheeseburger Quesadillas, Kim's

A SMALL McDonald's cheeseburger has 285 calories ... just sayin'!

4 Kim's Light Flat Bread Flatbread
1 lb lean ground turkey
1 large onion, chopped
2 tsp garlic powder (or salt)
1 tsp onion powder
¼ cup ketchup
1 tbsp mustard
½ cup reduced fat cheddar cheese
dill pickles

Preheat griddle or oven to 350°.

To a large nonstick frying pan, add the ground turkey, chopped onion and seasonings. Mix together, breaking up turkey with a wooden spoon or spatula. Cook for 15 minutes until the turkey is thoroughly cooked. Add ketchup and mustard and stir until all is incorporated and allow to simmer on low heat for 3-5 minutes.

Place the Kim's Light Flatbread on counter. Put 1/4 of the mixture on the lower half of the flatbread. Sprinkle with 1/4 of the cheese and pickles slices. At this point you could add tomato and/or onion slices, too, if you wish. Fold the top half down and place quesadillas on a large baking sheet. (You can also use a panini press.)

Bake for 10 minutes until the flatbread becomes nice and crisp and the cheese is bubbly. Let sit for about 5 minutes to let cool down and use a real sharp knife or pizza cutter and cut into triangles. You should get 6 large pieces out of each quesadilla.
