Shrimp Scampi, Kim's

Whether you use one of the expensive wines you’ve saving or just an inexpensive brand — this is a meal guaranteed to delight!

1 tsp olive oil
1 tbsp garlic, chopped (4 cloves)
¼ tsp red pepper flakes
*1 lb shrimp, peeled and deveined
½ cup white wine
3 tbsp lemon juice
1½ cup fresh tomatoes, chopped
2 tsp light butter
2 tbsp fat free parmesan cheese
2 tbsp fresh parsley

*NOTE: calories are for 1 pound of shrimp after peeling and cleaning. Most 1 pound bags will be only 12-13 ounces once tails are removed, so you may want to increase your shrimp purchase to 1-1/4 pounds before cleaning.

Heat olive oil in a skillet and sauté the garlic lightly with the red pepper flakes. Stir in shrimp and cook until just cooked through. Add in white wine, lemon juice, and tomatoes then cook mixture for another 2 minutes. Add butter and Fat Free Parmesan Cheese and stir until butter melts.

Garnish with basil or parsley.

We factored this recipe without pasta so that you can use any type of pasta desired, or even use rice. However, traditionally it is served with pasta ... Boil Fiber Gourmet Pasta according to package directions. Reserve 1/2 cup pasta water in case more sauce is desired. If so, mix pasta water in after cooking with the white wine and lemon juice.

Serve scampi over pasta, rice, zucchini pasta, or in a bowl with a little rotini or penne and broccoli. Or ... enjoy alone!
