Tequila Chicken, Kim's

1½ lb chicken breast
¼ cup tequila
1 tsp olive oil
1 tsp cumin
2 tsp chili powder
zest of 2 limes (or 1 tsp lime juice)
salt and pepper to taste
Dietary Restrictions : Dairy Free, Kosher, Low Sodium, Gluten Free

Put the chicken breasts into a resealable plastic bag and add tequila, oil, chili powder, cumin, grated zest of limes and some salt and pepper. Seal the bag and squash it all together. Add the chicken, reseal the bag, squash again. Refrigerate for at least 30 minutes.

Remove chicken from bag and discard excess marinate. Grill (about 10 min per side) or bake (about 30 minutes) chicken until done. Shred or cut chicken into strips.
