Kielbasa & Bean Soup, Kim's

This is a very yummy soup recipe to make and freeze for future lunches.

ingredients
14 oz turkey kielbasa
1 cup chopped onion
2 tsp chopped garlic
1 can black eyed peas (drained and rinsed)
1 can cannellini beans, (drained and rinsed)
4 cups fat free chicken broth
1 cup water
1 tbsp fresh parsley
4 cups fresh spinach

Directions

Cut the kielbasa in half (at the curved end) so you have two large pieces. Slice each one of those down the center the long way and then slice to make the pieces into small half circles. Add the onion to a large stock pot and cook over medium heat until they are turning translucent. Add garlic and kielbasa pieces. Cook for about 5 minutes and then add the drained beans, chicken broth and water. Add salt and pepper to taste. Add fresh or dried parsley to the soup and simmer for 5-7 minutes. Just before serving, add fresh spinach to the pot and stir. Cook until spinach has wilted and serve.
