This Mexican-style casserole is perfect to bake for a family meal. Or take it along to a potluck dinner.

ingredients
3 Kim's Light Flatbread
1½ lb lean ground turkey
1 small onion, diced
2 cloves garlic, minced
1 small can chopped green chiles
1 cup enchilada sauce, separated
1/2 can low fat cream of chicken soup
1 cup reduced fat shredded cheddar cheese
10 small black olives, sliced
1 scallion, sliced

Directions

Preheat oven to 350°.

In a large skillet, brown lean ground turkey with the onion; remove from heat and drain off excess fat. Add 3/4 cup enchilada sauce, soup, chopped chile peppers, garlic salt, and minced garlic; mix well.

In the prepared baking dish, layer one flatbread; spread with 2 tbsp of enchilada sauce; top with 1/3 of the enchilada mixture and 1/4 cup of the cheese. Repeat layer. Repeat layer again, but on the top of the 3rd layer use remaining cheese and sliced black olives.

Bake in the preheated oven for about 20 minutes.

Let stand for 5 minutes. Sprinkle with scallions, slice, and serve.
