A slice of coconut pie for less than 100 calories! And so delicious!
1 cup Whey Low Granular sugar
1¼ cup Let's Do Organic Reduced Fat Coconut
⅔ cup Kim's Light Biscuit Mix
6 fresh egg whites
¼ cup Brummel and Brown Spread
½ tsp coconut extract
1 tsp vanilla extract
Combine milk, Whey Low Granulated Sugar, 1 cup of the Organic Reduced-Fat Coconut, Kim's Light Biscuit Mix, egg whites, Brummel & Brown®, vanilla and coconut extract in a blender. Cover and blend on low speed for 3 minutes. Pour into a 9" pie plate sprayed with fat-free cooking spray. Let stand for 5 minutes, then sprinkle with remaining coconut. Bake at 350°F for 40 minutes. Serve warm or cool. Store any leftovers in the refrigerator.
