What's better than Mac n' Cheese? MORE Mac n' Cheese! And by adding some low density veggies and salsa, you can have more for less. That's the way we like it. Uh-huh!

1 box Fiber Gourmet Mac-mmm-Cheese
2 medium scallions
1¾ cup Green Giant Mexicorn
¼ cup sliced jalapeno pepper,
¼ cup fresh salsa
½ cup peppers, all varieties
1 oz reduced fat shredded cheddar cheese
Dietary Restrictions : Kosher, Vegetarian

Cook *Light Mac-mmm-Cheese according to package directions. After it has cooked, stir in all ingredients, except for the cheese. Spray a 9x13 baking dish with fat-free cooking spray. Pour mixture into the dish and top with the cheddar cheese. Bake at 350°F for 15-20 minutes, or until cheese is melted and mixture is completely heated throughout.
